This our Gold medal winning long fermented dough inspired by old world European sourdouh breads. Our version of the classic country loaf includes a heaping portion of freshly milled locally sourced Sonoran White Whole Wheat flour, an heirloom variety of low protein wheat originally from Sonora Mexico,  fermented with a young leaven to create an open crumb, high rise and delicate flavor.
